Gluten Free Yuca & Sweet Potato Pancakes

Pancakes to start the day. Anyone? These gluten-free yuca/sweet potato pancakes may not be the prettiest, but daiyum, they tasted good!
First of all, I know this is not a proper recipe post, but since these babies came out tasting good I decided to do a quick share on the rough idea behind the way them anyway 😉
So, this is what’s up:
Hearty gluten free pancakes: batter made from yuca & sweet potato flower (50/50), some ground flax seed, a scoop of natural peanut butter, eggs, coconut milk & coconut oil, pinch of salt. Fried in coconut oil and oil + nuggets of artisanal chorizo. Topped the pancakes up with old Dutch cheese, then fried an egg on top of it all as it was cooking. Added slices of avocado on the plate. A drizzle of organic maple syrup to finish things off.
Again, they might not look the prettiest, but I’ll gladly take function over form on this one. These babies were MEAN!!! (and they surely helped me through the day).
Juice on the side: pineapple-banana smoothie made with ice, a few cashew nuts and a dash of fresh orange juice. That’s what’s up; a breakfast that packs its punch, brought to you by TGD!
